Some cities even organize carnivals! The biggest carnival in France is le carnaval de Nice. It takes place in February for 2 weeks in the sunny streets of Nice.
But where does this tradition come from?
The origin of Mardi Gras
In Christian tradition, Mardi Gras is the day before the Lenten fast. The fast lasts 40 days. So during the week before the start of Lent, people eat, dress up, hide their face behind a mask (to stay anonymous) and celebrate! It's carnival.
The word "carnavale" comes from latin "carnelevare" which means "remove the meat (from meals)". During the fast, Catholics did not eat meat. Today the tradition of carnival has remained even if fast has disappeared.
What do we eat during carnival?
Today, the French tradition is to make crêpes. But depending on the French regions, we will make special waffles or beignets.
